Marie-Courtin is the project of Dominique Moreau, who farms a small estate of old vines in the village of Polisot, in Champagneâs CĂŽte des Bar. This southern part of Champagne, closer to Chablis than Reims, is known for its Kimmeridgian limestone and more Burgundian sensibility. Dominique works entirely biodynamically, ferments with native yeasts, and adds nothing apart from minimal sulfur at bottling. Her wines are single-varietal, single-vineyard, and single-vintageâeach one a pure snapshot of time, place, and quiet intention.
